About once every three weeks, I make granola. I rarely eat it, since I rarely eat breakfast. I’ve been making granola for a couple of years. It makes me feel both virtuous and extravagant. Virtuous for the obvious reasons, and extravagant because, after all, I could just offer cheerios for breakfast, rather than indulging in whatever ingredients draw my eye. But the granola smells wonderful and a little bit seems to disappear from the jar every morning. Although I started with a basic recipe, it’s different every time.
When we travel I often bring back honey, and that’s a key ingredient in my granola. Usually I use a little bit of cinnamon, but sometimes cardamom finds its way into the mix. Almost always some maple syrup. Coconut. An ever-changing mix of nuts, this time raw peanuts and roasted pepitas. Small seeds like flax or sesame or poppy. A little flavorless oil, some vanilla and a splash of water. Couldn’t be easier. Couldn’t be more delicious. Not much cheaper than the fancy ones at Fresh Market, but lots more fun. Not especially low-fat or low-sugar or low-anything, but intensely satisfying even in small servings.

I must say, I also indulge in making granola. I do eat it everyday when I have it, as does my husband . I don’t get a friendly look on the mornings when it is all gone! I like to use pretty much the same ingredients as you do with the addition of coconut oil as a constant. One thing for sure, it is never the same!
